When developing our menu, we wanted to keep it focussed on comfort foods. Our brainstorming sessions came up with quite the list of comfort foods, but one topped the list…Macaroni & Cheese. Not the kind you get in a box (though, I must admit to the occasional consumption of such foods), but the real deal. Cheese sauce made from scratch, with just the right combination of ingredients.
Once we had decided to add Mac & Cheese to the menu, the fun times began with experimentation to get just the right amount and combination of cheese. The end result was the development of three macaroni & cheese dishes that we are sure you will love. Named after the three roads that converge right in front of the cafe, we are really excited to bring you:
Fernwood Mac & Cheese: This is a delicious blend of three cheeses. Cheddar, mozzarella and swiss. In just the right proportions these cheeses make a sauce that smooth and gooey, with a familiar taste. Mixed with pasta cooked to just the right level of doneness, it doesn’t get much better…except maybe with the side salad or mixed greens that we serve alongside.
Walker’s Hook Mac & Cheese: This version is what you get when you take homemade cheddar cheese sauce, add elbow macaroni pasta and mix in some of the yummiest hot dog wieners around (we use “Natural” wieners). There is something special about the type of wieners that we use that lends itself to the perfect covering of cheese. You taste the wieners without loosing the mac & cheese experience. This one hit it out of the ballpark (yes, the pun was intended).
North Beach Mac & Cheese: The third winning combination came from our personal favorite non-meat combination for macaroni. This version combines cheddar cheese sauce with pasta and then the last minute addition of grape tomatoes. The tomatoes are “cooked” ever so slightly by the heat from the pasta and cheese sauce. This slight cooking gives a wonderful sweetness to the tomatoes and means a wonderfully juicy bite that will waken your taste buds for sure.
